"Food allergies are a reaction to an immune response directed against certain proteins in food," he clarifies. "The most common food allergies, which account for around 90% of reactions, are to milk, eggs, wheat, soy, tree nuts, peanuts, fish, and shellfish. Sesame was recently added to this list in 2023."The severity of these reactions can vary greatly, ranging from mild symptoms like hives and lip swelling to life-threatening respiratory issues and shock. According to the Centers for Disease Control and Prevention, nearly 6% of adults and children in the United States have a food allergy, with the potential for these allergies to develop at any age.

For those dining out, carrying a medical ID card and sharing it with the server can help ensure the chef is aware of the allergy and can take the necessary precautions.

It's crucial to understand the distinction between food allergies and food intolerances, as the two conditions can present similar symptoms but require different approaches. "Food allergies can have a broad reaction," explains Dr. Tarbox. "They can be mild with a localized skin rash, or they can have more severe reactions such as wheezing, shortness of breath, nausea and vomiting, a drop in blood pressure, and seizures."In contrast, food intolerances are typically more localized and milder, often related to the digestive system's ability to break down certain food components. "Food intolerances are usually related to digestion of foods with enzymes and breaking the food down. Those tend to be more localized and milder and related to the GI tract," Tarbox clarifies.

The treatment for food allergy reactions depends on the severity of the symptoms. "If it's a rash or hives, you could probably treat it with antihistamines, but if it's a more severe reaction, it's really important to understand how to use an epinephrine auto injector," Tarbox advises. Proper administration of the epinephrine injection is crucial, as the medication must be left in place for the appropriate duration to ensure the full dosage is delivered.Exciting developments are on the horizon for individuals with food allergies. Tarbox highlights the recent approval of Omalizumab, or Xolair, a medication previously used to treat asthma and chronic hives, which has now been approved to help lessen reactions to food allergies.
